Freezing Pancakes
There’s a lot of things I’m good at and there's a lot that I’m not including being a morning person. I wish I was but as hard as I try, I’m just not but I do like morning routines including blueberry pancakes on weekend mornings. Since I don’t like to get up early, I like to make and freeze pancakes ahead of time and then pull out of the freezer when I need them. I recently shared this tip on my Instagram stories and received a ton of questions about my process. It’s super simple and makes my weekend mornings run so much more smoothly.
First up, I make a batch of pancakes when I have blueberries to use up.
I make them according to the directions on the package just as I would do if I were going to eat them right away.
I love blueberry pancakes but if you’re like my brother and don’t like berries, you can certainly omit them.
After they’re cooked through, put them on a cooling rack to cool completely. I like to use the cooling rack so the bottoms don’t get soggy. When fully cooled, I place them inside of a ziplock bag and throw them into the freezer, pulling them out as I want them. I usually reheat them in a warm skillet with a bit of butter until they are warmed through and are slightly crispy around the edges. You can also reheat them in the microwave.
